Looks great. I have never tried smoking lamb, may give that a go. Have tried roasting on a barbecue with a herb recipe that included lavender. What a surprise that recipe was, unfortunately it missed out several steps, in fact about 50 of them. They are the steps you take to the bottom of your garden where you drop kick the vile tasting mess into the next doors garden so their dog can eat it (wouldnt feed it to my two.)

Actually, this was my first go at a leg of lamb, turned out great.  It was a simple prep, the leg was already boned so I just butterflied it open and slathered on about 5 or 6 minced cloves of garlic suspended in olive oil, then dusted it with some salt and black pepper.  Popped it in the smoker a bit before 3pm with the firebox was rolling with a mix of mesquite wood charcoal and a few chunks of hickory.  Kept the temp between 200-225 and a wide open flue pipe to keep from trapping too much smoke in the cook chamber.  A bit after 7pm the lamb was at a perfect internal temperature of 150 for a nice medium/medium-rare finish.

Even the dog liked it.

Thing with lamb is that it is very fatty. When we do a roast I usually put it on a trivet with spuds and other root vegetables underneath it and it has to be cooked low and slow with lots of garlic and rosemary on it. The excess fat should be spooned off out of the dish before crisp ing the spuds while the meat rests and then the remaining juices can be used for the gravy or 'Jus' if you are a pretentious git who needs kneeing in the groin!

A GOOD leg or rolled shoulder is a magnificent thing. A bad one really is a horror! Over cooked lamb is also like chewing bullets, awful!

If you are a 'Lamb Novice' I suggest you try and get some loin chops, you need a few for a good feed as the *Eye* of the chop is small but they are easy to cook and hard to fuck up. "Nom, Nom, Nom" indeed! Very Happy

From the land of 30 million sheep (don't tell the Aussies they may start sex tours again), if you want lamb that's not fatty and tastes great hunt out Wiltshire breed. They are a moulting breed that organic and lifestyle farmers prefer and seem to be gaining in popularity.
Well worth the effort.
Favourite lamb is shanks or neck chops done in a slow cooker. Very Happy

If I ever visit with you guys I will have to try it but I always disliked lamb and mutton ever since I was a wee lad and I asked my mother "why are you cooking spoiled meat?" when she was making lamb.

It's boneless Sirloin for me!!!!!!!!!!!!

At last someone speaks the truth. I grew up eating mutton from the scabbiest old wether Dad could find. He would butcher it himself and leave the bulk of that foul rancid fat on the crappiest cuts. To this day, the smell of mutton cooking makes my gorge rise.

Same here, back in France we did 2 rotisserie lamb by the creek we always hung out at night in the Spring...
One of them had maggots in it, yikes!! Turned me off that crap.
We had good intentions though, playing guitars around the fire, plenty of naked women and related activities I love you I love you
Then that one spoiled lamb, damn it!

Good thing about maggots, they only eat the rotting flesh.
They leave the good bits for you and I.

Meanwhile, I bought a slab of rib yesterday. That'll keep my protein and iron levels up for a fortnight.
BBQ'd a piece last night, melted like fairy floss on the pallet.

Funny how I mentioned this yesterday cause last night (5 AM for him), a childhood friend Skyped me and since he was present to most of those get togethers we talked about it for an hour or so.
We had it made back then really... riding motorcycles like we stole them, playing Gipsy Jazz by the water and messing around with girls.
What a life style! Too bad the fucking French embrace Socialism, I'd still be there.

First attempt at a roast ever, Lamb Drumstick. This on the Webber Mini-Q in the mancave.
Bloody baking tray was too big, had to crush it up a bit one end.
Full as a goog right now. Thumbs Up
